DOMAINE DES HAUTES GLACES 2015 Episteme R15D24 CARRE

R15D24 Carré (meaning "square") is the first part in the exploration into how the degree of balance impacts the taste of the whiskies at the Domaine des Hautes Glaces distillery. It was taken from a parcel made from a single plot of rye (Caroas variety) from the Gabert climate, harvested in 2015. Aged for 8 years in a single cask previously used for vin jaune wine, it was then divided into three batches, using varying reductions to showcase different degrees of balance, each revealing a singular facet of this whisky of character, a clean, tasty and legitimate expression.
