Pommeau de Normandie

Pommeau is an alcoholic drink that consists of cider must and distilled cider (apple brandy). The production principle is simple, rather than adding apple juice to the brandy, the brandy is added to the apple juice, the goal being for the predominant flavour to be apple juice, rather than the other way around. Depending on the region and the type of brandy used, there are several appellations. Pommeau de Normandie has been an AOC since 1991 and uses Calvados; Pommeau de Bretagne has used Fine de Bretagne since 2009; and Pommeau du Maine has used Fine Maine since 2009. They are all aged in barrels for at least 12 months.
