In 2023, Version Française inaugurates a new cycle dedicated to the various stages of whisky production. Called Cerealis, the first episode of this cycle highlights the emblematic cereals of whisky production around the world, with four versions made from corn, rye, barley and wheat. Distilled between 2013 and 2019 in an Armagnac still, the four small batches revisit the categories of bourbon, rye, single malt and grain whisky.
Triticum 2018 is a whisky made from 100% malted wheat and aged for 5 years in ex-cognac casks. The finished product takes us on a journey through many different lands of flavours and aromas, all with richness as their common denominator.
Tasting notes
Nose : Rustic, deep. After elegant notes of agave syrup, the first nose takes us to the hot vapours of a vegetable broth before introducing richer fragrances (rum baba, yoghurt cake). On the second nose, a subtle note of pepper adds relief and complexity to the promising nose.
Appearance : Or très clair.
Palate : Precise, sensual. Rich from start to finish! Right from the attack, which reveals lemon meringue tart, to the end of the palate, which offers an interlude of tangy sweets. This richness is interwoven with woody and slightly aniseed flavours, green tea and hibiscus.
Overall : Effervescent, wandering. The start of the finish develops a lemonade aspect and becomes increasingly noble (old books, leather). In the aftertaste, oyster mushroom flavours take us to the forest floor.
