Nose : fine, mellow. Salt and agave jostle for attention. Before things turn sour, lime manages to reconcile the two. Pepper, sweet almond and star anise then take over. Vanilla, pecan nut and lightly toasted woody notes beautifully illustrate the twelve months

Palate : tender, creamy. The omnipresent agave is incredibly refined here. Salt lingers long after the spices have faded. It becomes exotic (lychee, persimmon), earthy (clay) and praline (nougat). Dried fruits can also be identified (macadamia nuts, dates).
