The former bodega of José Pemartin, established in 1810, gave its name to the Permartin sherries, including this Pedro Ximenez wine made from the grape of the same name. To produce this fortified sweet wine, the grapes are sun-dried after harvest to concentrate their sugar and flavors. An oxidative aging in American oak barrels for over 5 years completes its aromatic profile dominated by dried fruits, with complex tertiary notes of nuts, leather, and rancio.
