KAWATSURU

Founded in 1891 in Kanonji, Kagawa Prefecture, Kawatsuru Shuzō has been led since 2004 by Yuichiro Kawahito, the sixth-generation representative. The brewery relies on the pure groundwater of the Zaita River and local rice varieties such as Sanuki Yoimai and Oidemai.

Kawatsuru also utilizes Sanuki Olive Yeast, a unique yeast developed from Kagawa’s olives, which imparts clean aromas, light acidity, and a refreshing mouthfeel. The production focuses on Junmai and Junmai Ginjo sakes, highlighting the natural expression of the rice and a well-balanced finish.
