Covering an area of fifteen hectares — nine in Grande Champagne and six in Petite Champagne — the clay-limestone terroir of Domaine Jean-Luc Pasquet has been farmed organically since 1995. Composed mainly of Ugni Blanc since the early 2000s, the vineyard has diversified with the introduction of Folle Blanche and Montils, along with the acquisition of a few ares planted with Merlot and Cabernet Sauvignon, dedicated to the production of rosé Pineau des Charentes. Fermentation, carried out using the grapes’ indigenous yeasts, lasts between five and six days. Selected for the Through the Grapevine range, this venerable expression, first aged in new oak casks and then in refill casks, reveals an aromatic and gustatory profile with a surprisingly springtime character.

Nose : Delicate, expressive. Fruity (grape, pineapple, mango), honeyed (linden), gently vanilla and lemony, the aromatic palette explores universes as varied as they are complex. With aeration, scents of white flowers (lily of the valley, jasmine), cardamom, coconut milk, and plantain banana highlight its great nobility of expression.

Appearance : Topaze.

Palate : Both pulpy and tangy. Revealing a new tropical fruit (passion fruit), the gustatory profile quickly evolves toward flavors of fresh ginger, citrus zest (lemon, orange), and toffee. This is followed by a rooty (gentian) and saline sequence, then a finish infused with linden and bay leaf notes.

Overall : Dense, concentrated. Returning to the elegant notes of white flowers, linden, and vanilla encountered throughout the tasting, it now displays a springtime character (grape flower) of great freshness. On the retro-olfaction, this sensation is enhanced by the presence of fresh, juicy fruits (mirabelle plum, pear).
