In 2023, Version Française inaugurates a new cycle dedicated to the various stages of whisky production. Called Cerealis, the first episode of this cycle highlights the emblematic cereals of whisky production around the world, with four versions made from corn, rye, barley and wheat. Distilled between 2013 and 2019 in an Armagnac still, the four small batches revisit the categories of bourbon, rye, single malt and grain whisky.
This version produced with 2-row spring barley was bottled at 48% ABV and matured entirely in heavily charred, large-grain new French oak casks from Limousin. Horedum’s stunning palette of flavours and aromas is run through with lively cereal, herbaceous and fruity sequences.
Nose : Refined, harmonious. First, the grain is fresh. Next, chocolate shavings and freshly cut grass enrich the aroma palette without disturbing the balance. The second nose is fuller and becomes empyreumatic (toast).
Appearance : Ambre clair.
Palate : Sparkling, elegant. Still present on the attack, malted barley is accompanied by spicy, rich and delicately woody flavours. The mid-palate reveals an energetic (cherry) and resolutely charming (apricot) fruit. Allowed to breathe, the flavour palette becomes exotic (pineapple and mango juice).
Overall : Serene, unpredictable. At the start of the finish, spicy and sweet pastry (sponge finger) flavours pair together wonderfully and lead into a herbaceous after-taste (sugar cane) characteristic of the bottling’s incredible complexity. Evoking hay, the retro-nasal olfaction transcends the rustic and authentic character of the end of the finish.
