Nose : A nose that reflects the spirit of the cuvée. A whiplash effect. Surprising, singular, a poem, a song of zests. A mix of oranges and lemongrass, suggesting a freshness on the palate.

Palate : The structure is generous and creamy. The friendly face-off between the acidity of an English candy and the mellowness of a ripe pear is a balancing act. Only the color of this whisky suggests that it has been aged in an old Cognac cask. On the palate, there's not a hint of wood influence.

Overall : What follows is a long tunnel of singular flavors made up of gently toasted cereals, fruitful orchards and fresh cuts of herbs. The final tandem of spelt and pear is a destabilizing pleasure, since it's almost unheard of. Seasonal fruit and cereals: an agroforestry whisky.
