VILANOVA 3 ans 2017 Version Française

With 70 years of family expertise in producing fruit eaux-de-vie behind them, Sébastien and Céline Castan ventured into whisky in 2010. Their plan was to create a whisky rooted in its terroir: they therefore use the distillery's own barley and limit themselves to local wine casks. It is also this quest for authenticity that led them to keep their mobile still which, in the past, roamed the region to distil fruit. Made up of 4 copper vessels and a small Stupfler rectification column, this still produces in a single pass a light, elegant spirit at 80% ABV. Rather unusually, the spirit is then reduced before being put into cask which, in keeping with the climate, results in an angels' share of around 5%. Casked in February 2017, the whisky selected for VERSION FRANÇAISE comes from peated barley and was aged in an ex-cask of local white wine (Grenache Blanc).
