Produced from Clairins Sajous, Vaval, Casimir and Le Rocher, this version is supported by a backbone of sugarcane and hot cane sugar. The remarkably slender palette of flavours and aromas is revealed with extreme sensitivity and sensuality. Each note, whether fruity, floral, medicinal, spicy or honeyed is produced with masterful precision. Nose : refined, complex. On the initial nose, sugarcane reveals its heady (geranium, rose) and fruity (apricot, pear) character. Allowed to breathe, cane sugar mixed with liquorice spreads through the aromatic palette, bringing even more depth. Increasingly dense, the nose becomes spicy (pepper, cinnamon) and medicinal (tiger balm). Arriving from far in the distance, superb notes of red fruits (strawberry, raspberry) then appear.

Palate : unctuous, elegant. The almost creamy attack coats the taste buds in vanilla and almond milk. The slightly tannic mid-palate has a very velvety texture. From white peach to fresh fig, apricot to candied pear, peony to lavender and root ginger to gentian, it reveals incredible finesse. The end of the palate is honeyed (acacia), roasted and vegetal (tobacco, sugarcane).

Overall : long, concentrated. The very rich finish has lots of texture. The vegetal character of the end of the palate is transcended by notes of cut hay and dried flowers. In the background, still hot cane sugar floods the taste buds. With a beautiful ochre colour, the retronasal olfaction is nuanced and unctuous. With remarkable freshness, the empty glass releases a few aromas of citrus fruit (lemon, grapefruit), sage, orange blossom and vanilla.
