The Chichibu distillery is equipped with a 2,400-liter mash tun, where mashing is done manually using a wooden paddle, eight 3,000-liter Japanese oak (mizunara) washbacks, and two 2,000-liter Forsyth’s pot stills. It also has its own malting floor and primarily uses local barley. Aged in a first-fill bourbon cask, this third release in the series naturally embodies the Chichibu style. Continuously rising in intensity, its aromatic and flavor profile offers a stunning sequence of malty, fruity, honeyed, spicy, herbal, and exotic notes—each more captivating than the last.

Nose : Both fresh and deep. Behind an initial malty and lemony impression, an abundance of fresh fruits (pear, apple, grape) and almond aromas take over the entire, highly concentrated aromatic profile. It continues with elegant notes of wax, linden honey, and bay leaf.

Appearance : Or vif.

Palate : Clean, distinguished. Gently vanillaed and malty (barley grain), the flavor profile follows seamlessly from the nose. Becoming increasingly expressive, it then ventures into wonderfully tropical (pineapple, banana, golden kiwi) and spicy (ginger, nutmeg) territories.

Overall : Complex, dynamic. Impressively long, the finish is remarkably indulgent (flan, mirabelle tart). Over time, flavors of coconut milk and absinthe intertwine in an exquisitely harmonious and complementary way. Truly magnificent.
