This 14 year old Caol Ila was bottled by Scotland's oldest independent bottler, Gordon & MacPhail, for the legendary Connoisseurs Choice range. Extremely refined, this version reveals Caol Ila in a particularly complex light. Although, from start to finish, smoke and peat are constantly present, it is with subtle salty, medicinal, saline, ashy, mineral and even empyreumatic nuances that it slips into the palette of flavours and aromas. In the end, they gracefully take the leading role in every part of the tasting.
Profile: the rich initial nose is intensely fruity, peaty, smoky and spicy (clove). Allowed to breathe, it becomes honeyed and preciously woody (beeswax). On the mid-palate, a dry peat is coated in seaweed and sea spray. Later, smoke makes a comeback. The silky finish is fruity (white peach) and mineral (slate). Gradually, it becomes richer (vanilla flan).
- Appearance : deep burnished gold.
- Nose : ample, rich. The very camphoric initial nose is also fruity (apple, pear), peaty, herbaceous (cut hay, straw), smoky and spicy (ginger, clove). Allowed to breathe, acacia honey and precious wood (beeswax, polish) liven up the palette of aromas. Little by little, its medicinal character (ointment, benzoin) begins to stand out. In a grand finale, verbena, dried twigs and rice grains bring lots of breadth.
- Palate : fine, fairly lively. Following in the nose's footsteps, the attack is fruity but more exotic (pineapple, banana). Suddenly intense smoke and gentian root bring out this Caol Ila's island character. On the mid-palate, a dry peat is coated in seaweed, sea spray and liquorice. At the end of the palate, accompanied by citrus fruit (lemon, grapefruit), smoke makes a comeback in the form of smoke rings. Meanwhile, coconut and vanilla have slipped into every crack of the flavour palette.
- Overall : long, silky. Velvety and mineral, the finish is characterized by notes of white peach, agave and slate. It uses this schisty foundation to develop even further. In this way ethereal, it is also rich (vanilla flan, rice pudding). The retronasal olfaction is tarry, spicy (pepper) and fruity. The empty glass reveals lots of dried fruit and nuts (walnut, date, almond), as well as the acridity of the smoke and the peat's rooty side.

As well as reflecting its smoky, malted barley, Caol Ila is also oily and peaty, with marine and vegetable notes. Its recent official bottlings, which are particularly expressive, have an intense smoky and peaty character with a good balance of saltiness and sweetness. This independent bottler is without a doubt one of the most highly acclaimed in Scotland. It stands out, not for its age (though it is the oldest independent bottler in Scotland), but for its complete mastery of cask ageing. Gordon & MacPhail is the only bottler to have its own casks - carefully chosen for the purpose - filled by the distilleries themselves, instead of simply buying the ones suggested to them by the latter. This allows it to determine, in advance and with great precision, exactly how many years a whisky will need to reach ideal maturation.
Of all the existing specialist bottling ranges, Connoisseurs Choice is without doubt the oldest. The label underwent a few changes in the 1980s. Plainer and more restrained, it became two-toned with creams and browns. When segmentation by region of production region was adopted by the whisky industry in the early 1990s, the range changed its identity again. The label now shows a map of the region of Scotland where the malt comes from. To the delight of whisky enthusiasts, the range, which is always evolving, is now bottled at 43% and 46%.
