BOURGOIN COGNAC Verjus rouge

Very tart. Not very sweet. Unpasteurised. Bourgoin Verjus Rouge is a fresh, tart, non-alcoholic grape must made from an early harvest. Macerated for 30 days in vats on a cap of Merlot. This natural acidifier is ideal for use in cooking (deglazing, marinades, reductions, salad dressings) or at the bar (cocktails). Verjus has been used in France since the Middle Ages. Taillevent, Vatel, Carême and Escoffier all used and praised it in their days.
