Hand-picked, the grapes for Ximénez-Spínola PX Muy Viejo are exposed to the sun for 21 days, allowing gradual dehydration that concentrates the sugar. Aged for at least 15 years in American oak barrels in a solera that was started in 1918, it is considered a "cult wine" because of its quality and rarity. Clarified by natural decanting in barrel, it is bottled after light filtering, preserving its natural aromas and flavours.
Nose : The intensity of the sultanas is captivating and clearly dominates the other aromas. Notes of roasted coffee and dark chocolate, typical of long ageing, are subtly added to the aromatic palette.
Palate : On the palate, this wine reveals great finesse. Flavours of sultanas and dried figs dominate, blending perfectly with woody and toasty notes for a long, unforgettable finish.
