XIMENEZ-SPINOLA Fermentacion Lenta 2016

This dry white wine is made entirely from late-harvested Pedro Ximénez grapes. It has exceptional complexity thanks to slow fermentation in French oak barrels, with the pressed grapes gradually added so that fermentation can be completed without leaving any residual sugar. It is then matured on its lees with gentle stirring for six months. The over-ripe grapes bring a concentration of intense aromas and flavours. This meticulous winemaking process results in a complex wine that improves every year and can easily be kept for over 15 years under optimal conditions.
