    Produced through a fermentation process that typically lasts three days, Willett's ryes and bourbons are first distilled in a stainless steel distillation column and then in a pot still. Made from a mash bill composed of 74% rye, 11% corn, and 15% barley, this version is divided into three distinct stages, each sharing an irresistible strength of character. By turns spicy, fruity, powdery-honey, and even autumnal, its aromatic and flavor palette is also interwoven with cereal and medicinal notes that provide the essential framework for its balance.

    Color : vieil or soutenu.

    Nose : Full-bodied, deep. Particularly spicy (pepper, turmeric, nutmeg, clove), floral (carnation, iris), and citrusy (orange zest), the aromatic palette is enhanced by increasingly present rye notes. Upon aeration, mustard seeds and tiger balm add their medicinal touch.

    Palate : Rich, smooth. Tenderly powdery (cocoa, puffed rice), apricot-like, and infused (verbena, sage), the flavor palette evolves toward increasingly gourmand (nougat, praline), balsamic (pine, cedar), and honeyed (lime blossom, heather) tones. Then, superb eucalyptus flavors gradually echo the medicinal character of the aromatic palette.

    Overall : Concentrated, balanced. Infinitely cereal-like, the finish also displays seductive autumnal (mushroom, chestnut), roasted (coffee), and milky (almond, coconut) nuances. On the retro-nasal olfaction, cocoa powder, grated ginger, and noble spices (cinnamon, nutmeg) subtly permeate the taste buds.
