SULLIVANS COVE 25 ans 'Old & Rare' American Oak Second-Fill

Nose : Rich and creamy, with a burst of high ester fruit - mandarin, quince, fig and baked apple - layered with dill, peppermint, chocolate, coconut and cherry jam. Confections of rocky road, almonds, honeycomb and waffles give way to malt milkshake and biscuit notes, in a rare harmony of spirit and oak after 25 years.

Appearance : Doré brillant

Palate : Silken and full-bodied, carrying nectarine, pineapple jelly, apricot crumble and Portuguese tart. Savoury spice and dried citrus balance passionfruit, lemon shortbread and baked peaches. Hazelnut syrup, salted macadamia and pistachio ice cream add depth, underpinned by a subtle umami richness.

Overall : Lingering with sweet citrus, dried mango, kiwi and strawberry custard. Maple and honey flow into barley sugar, strawberries and cream, and lactic-spirited milk bottle lollies, returning to malt milk before florals of jasmine, lavender, mint and rose water leave Turkish delight on the palate.
