Senkin is a local brewery dating back to 1806. However, the two young Usui brothers have totally transformed the post-war legacy of their ancestors. They drastically reduced the volume of production and returned to traditional production methods while maintaining a certain modernity in the final product. Motivated by the idea of shaking things up, they wanted to develop their own formula of sweet and sour sake.
