The Renewal: Brewed in newly renovated facilities under the direction of Kosaku Tamura, one of Japan’s youngest Toji, this sake is crafted from locally grown Gohyakumangoku rice polished to 60%, using IYAPU3 and 701 yeasts to express the pure elegance of the Hokuriku region.
