    Our espadín capón is an espadín (an agave usually harvested when it is 8 years old) that we leave in the ground for an extra year after the flowering stem has been cut, in order to maximise the sugars present in the heart of the agave (the 'piña') when it is harvested, i.e. after 9 years. This technique, known as "Capón", is virtually non-existent in Mexico. Ramo de Rosas is the only brand to use a Capón harvest for all its espadín and tobalá production.
