Founded in 1980 and located in the town of Lautoka, Rum & Co of Fiji is the archipelago's only distillery. Distilled in a pot still, this version boasts an ester content of 189 grams per hectoliter of pure alcohol. Aged for 19 years in bourbon casks in the tropical climate of Fiji, it was then matured for 4 years in cognac casks at Maison Ferrand. With an ester content of 189 grams per hectoliter of pure alcohol, its remarkably well-balanced palette of aromas and flavors is based on highly refined sequences, the better to highlight its original character.

Color : vieil or soutenu.

Nose : rich, heady. Scents of mimosa, wallflower, artichoke base and salted butter caramel form a highly original initial olfactory sequence. On aeration, it opens up to fruitier (mandarin, apricot), more vegetal (sugar cane) and more syrupy (cane honey) scents.

Palate : lively and unctuous. Tertiary (dry leaf, mushrooms), praline and tenderly spicy (cinnamon), the palette reveals remarkably smooth artichoke flavors. Over time, it becomes increasingly leguminous (carrot, pumpkin) and root-like (gentian).

Overall : long, greedy. Fibrous (sugar cane) and endowed with a pleasant chocolate bitterness, the palette of tastes is now very serene. The retro olfaction is deliciously liquorous (cane sugar) and slightly camphoraceous. The empty glass is undeniably medicinal (balsam, arnica).
