This eau-de-vie is crafted from wild plums—small, round, blue plums with green flesh. Vieille Prune is a classic among fruit brandies, appreciated for its roundness and smoothness, which come from aging in oak casks for one year, giving it a lovely amber hue. The wild plums are fermented for several weeks. After being pitted, the fruit purée is left to rest for another 4 to 6 weeks to fully develop the fruit's aromas. After distillation, the spirit is reduced to the desired strength with water, then aged in oak barrels for one year, reaching 42% ABV.
