Nose : ample, refined. Hovers between notes of almond and apple compote. Evocative of freshly-cut grass and verbena. Its character asserts itself with quince, ginger, spices (black pepper) and crème brûlée.
Palate : firm, assertive. Exotic (banana), it reveals notes of icing sugar, nuts (almond, walnut) and oak. A sprinkling of something aniseedy (fennel), it develops into red berries (raspberry, strawberry).
Overall : long, lively. Its refined bitterness gradually shifts into the tannic. The lime lends it an invigorating acidic tanginess. It lingers beautifully with slightly oxidised fruits. Very long persistence.
