LA ROCHE AUX FÉES 2016 Version Française

Before venturing into whisky, the Everts couple first made their mark in beer. In 1996, they successfully set up the Brasserie Sainte-Colombe. It was not until 2010 that Henri began his first distillation trials with a mobile fruit still. In 2015, he acquired a still designed by a Nantes manufacturer that had ceased operations 50 years earlier (COYAC). The distillery then took the name of the neighbouring Neolithic site, an assemblage of megaliths weighing up to 40 tonnes whose construction is said to be the work of fairies! The whisky selected for the Version Française range is a single cask with very particular properties. Indeed, the wort it comes from – fermented by two strains of brewing yeast cultivated at the distillery – is a blend of 175 kilos of barley malt and 50 kilos of wheat malt. Aged in an ex-white-wine cask and patiently reduced, the result is a whisky of great finesse.
