DOMAINE DES HAUTES GLACES 2016 Version Française

Perched at some 896 metres of altitude in the Dévoluy massif, the Domaine des Hautes Glaces tirelessly pursues the quest for terroir it began in 2009. A champion of short supply chains and fully organic, the distillery controls every stage of production. The cereals thus come from 5 plots with very different climatic and geological properties. Fermentation lasts roughly a week and distillation is carried out in two pairs of open-flame Charentais stills (a 2,500-litre wash still and a 700-litre spirit still). In 2016, to mark the 60th anniversary of La Maison du Whisky, we selected a single malt aged in a Saint-Joseph cask. It is the second fill of the same cask that enters the Version Française range!
