Although the Uitvlugt distillery closed in 1999, its Savalle column still continues to be used at Demerara Distillers Limited, the only distillery in Guyana still in operation, founded in the same year. This version produced in this very still makes an art form out of originality. In its flavour and aroma palette, it frequently strays from its usual path and on the finish even evokes a Scottish single malt.

Color : Or très pâle.

Nose : Rich, concentrated. The peppery, vanilla and lime first nose quickly develops herbaceous (chlorophyll), medicinal (ointment) and camphoric notes. Allowed to breathe, white florals (lily, iris) interlaced with cane sugar fragrances bring lots of softness to the palette of aromas.

Palate : Clean, lively. Continuing on perfectly from the nose, the attack is lemony, medicinal and syrupy. The exotic mid-palate (pineapple, banana) is also vanilla and oily (fresh walnut). Gradually, cane sugar spreads across the palate.

Overall : Long, full. Also medicinal, the start of the finish reveals new fruits (William’s pear, Golden Delicious apples) and milky flavours (coconut, almond). The delicately liquorice after-taste is refreshed with plant infusions (thyme, bay leaf, camomile).
