Following the agave shortage between 1990 and 1994, a new variety called Azul, used by tequila producers, was introduced in Oaxaca. Del Maguey Azul is a direct descendant of this period. Distilled in San Louis del Rio, it offers the first opportunity to appreciate the organoleptic qualities of this agave in the face of the tried and tested ancestral methods of making Mezcal.
Nose : Frais, concentré. Le sel, l’amande, le citron vert et le poivre arrivent l’un après l’autre. Une sensation de rusticité renvoie à l’agave. Une pointe de moutarde vient recouvrir la palette aromatique de manière surprenante voire déconcertante.
Overall : Longue, tannique. La terre humide et la réglisse verte ajoutent à sa minéralité tandis que des notes de paille évoquent clairement une écurie. Elle se prolonge sur les olives noire et les fleurs capiteuses (géranium). La rétro olfaction est salée et terrienne.
