Christian Drouin Sr. carried out his first aging experiments in former Sherry casks. Since then, the Drouin house has developed a specialty in Sherry cask maturation, which imparts tannins that are both round and structured to the Calvados, along with notes of browned butter, rancio, and a subtle salinity on the palate.
This Calvados was matured for 5 months in a Palo Cortado cask from the house of Ximénez-Spínola.
Nose : Frais et délicat, mêlant pomme croquante, fleurs blanches et une touche de vanille.
Appearance : jaune doré.
Palate : Vive et légère, entre épices douces, fruits exotiques et notes crémeuses.
Overall : Longue et saline, sur la réglisse, le kiwi et un souffle floral.
