Caol Ila is the largest of Islay’s distilleries. Founded in 1846, it is located on the shores of the Sound, a site originally chosen in part for the purity of the water from Loch Nam Ban, which still provides the main supply for all Caol Ila whiskies today. Caol Ila presents Moch, meaning “dawn” in Gaelic. This single malt captures the essence of a fresh Islay morning with its pale golden color and a flavor profile that is both smoky and saline. Nose : Delicate and smooth. Milky notes (coconut, almond), citrus (lemon, grapefruit), fine peat, bacon, and salt—all these aromas are clearly defined. It develops into freshly cut grass

Palate : Gentle and silky. Spices come into play, notably clove, cinnamon, and pepper. Covered in ash, the smoke also makes its presence known. A pleasant menthol freshness and candied lemons add dimension.

Overall : Long and caressing. Aromatic herbs (verbena, sage) rest on a layer of licorice and peat. Curry and cardamom enhance its spicy character. The whole is perfectly balanced and full of inspiration.
