KINRYO
Nishino Kinryo Co., Ltd. is a sake brewery founded in 1789 (the first year of the Kansei era), located in Kotohira, Kagawa Prefecture. The name “Kinryo” was given by the Confucian scholar Rai Sanyo, who compared the beauty of Kotohira to that of the ancient Chinese city of Jinling (modern-day Nanjing). The water used in the brewing process comes from a pure spring near the Kuzuhara Shintō shrine, a site with over a thousand years of history. This spring flows continuously, even during times of drought.
While preserving its artisanal traditions, Nishino Kinryo also incorporates modern techniques and sensibilities to craft well-balanced sake, ideal for food pairing.
