When Warenghem ventured into French whisky in 1983, it did so humbly, drawing on the know-how patiently accumulated by the Scots over the previous two centuries. It therefore took inspiration from the methods in vogue across the Channel: it equipped itself with two pot stills and worked mainly with cask types that had already proved their relevance in maturing whisky in Scotland. In the early 2000s, however, it diversified by working with Breton oak and local casks, as shown by the excellent Chouchen cask previously selected for VERSION FRANÇAISE. This time, the selected cask is firmly in keeping with the distillery's Celtic heritage. It is a second-fill Oloroso sherry barrel that held a spirit intensely peated with Scottish peat at 45 ppm.
