Located in the far south of Japan on the island of the same name in the East China Sea, the Amami Ohshima Shuzo distillery makes shochu from locally produced black sugar loaves (kokuto). Produced from a three-week long fermentation and distilled in a single batch in a stainless steel pot still, this non-chill-filtered version has been aged since March 2017 in an American oak barrel. Closely resembling an agricultural rum, and also at times reminiscent of a white wine from the Saint-Joseph appellation, its aromatic and taste palette constantly oscillates between smoothness and acidity. Remarkably fresh, it also takes herbaceous paths, giving it a particularly seductive springtime character.

Color : or vif.

Nose : Both rich and fresh. Deliciously vanilla and lemony, the aromatic palette is also herbaceous (cut hay, mint) and mineral (chalk). On aeration, scents of clove and nutmeg add vitality. Increasingly oxidative and exotic (pineapple, banana), it becomes considerably more powerful.

Palate : Both lively and unctuous. Following on from the nose, the palate is spicy (Cayenne), milky (rice pudding) and lemony. Gradually, fresh cane sugar coats the taste buds. This savory sequence evolves towards more licorice and candied notes (pear, mirabelle plum).

Overall : Long, well-balanced. Marked by velvety tannins (mirabelle plum) and flavors of grated ginger, the tasting evolves on fermentary notes (sourdough, financier). Juicy, the retro olfaction returns to the exotic fruits (pineapple, green banana) of the aromatic palette.
