The Yamatozakura distillery is located on the coast of the Kagoshima Prefecture, the historic heart of sweet potato farming in Japan. Produced from the starch-rich Koganesengan variety, this shochu was aged for three years in enamel vats. The flavour and aroma palette very naturally recreates the earthy and rustic character of this well-known tuberose. A gentle aniseed and lemony freshness adds bags of energy.

Color : Incolore.

Nose : Rich and unctuous. On the first nose, fleshy notes of slightly burnt sweet potato fill the air. Allowed to breathe, fine notes of starch and compost highlight the wonderfully rustic character of the equally floral (hyacinth) and fruity (raspberry) aroma palette.

Palate : Well-balanced and smooth. The vegetal attack (lucerne, hay) is marked by incredibly fresh aniseed flavours. The salty mid-palate generously takes on the notes of cooked sweet potato from the first nose. A beautiful spicy end to the palate (nutmeg).

Overall : Long, silky. The start of the finish confirms the flavour palette’s spicy development, adding pepper to the mix. The well-developed after-taste is soft and milky. The end of the finish is invigorated with subtle flavours of lemongrass and apricot.
