Located in Thurso, in the extreme north of Scotland, the Wolfburn distillery began production in 2013. After an initial version aged in quarter casks that was released at the beginning of this year, which was remarkable in every aspect, we invite you to try this small batch, made from a blend of whiskies aged in sherry (18%) and bourbon casks (82%). While the grain is evident, this batch has a particularly powdery mouthfeel, accompanied by a pleasant minerality. Its rather extrovert bucolic accents reveal a character full of lyrical poetry._x000D_

Nose : refined, dynamic. Creamy and vanilla-scented, it is simultaneously exuberant, fresh and herbaceous (cut hay). Very mature, it becomes increasingly fruity (pear, orange) and honeyed (lime blossom). Cocoa powder and grated ginger gradually form a smooth carpet on which heady flowers (peonies, roses) are laid. _x000D_ _x000D_

Palate : creamy, silky. At first, the cocoa and fruity notes of the nose are reproduced, but only so they can be transcended... The mid-palate then changes the register with marzipan and acacia honey. On aeration, walnuts and dates again highlight the pleasant impression of sweetness that emanates from this whisky. _x000D_

Overall : long, assertive. The minerality (chalk, pencil lead) and spices (cinnamon, cloves) come through in a single block. Eventually we are standing before a golden field of barley, bathed in the last rays of sunshine. The retro-nasal olfaction is extremely juicy and exotic (pineapple, banana), while the empty glass offers roasted notes (coffee), chocolate, and spices (grated ginger)._x000D_
