    BOURBON : Willett Bourbon 8 Year Old 2018 is a straight bourbon from Kentucky in the United States.

    PROFILE : This bourbon reveals a rich and resinous profile, featuring rancio, chocolate, floral, tropical fruit and honeyed notes. Made from a mash bill composed of 65% corn, 20% wheat and 15% barley, this cask-strength bottling was aged on the 14th floor of warehouse B.

    Color : acajou

    Nose : Rich and full-bodied. On the initial nose, aromas of rancio (apricot, cherry in eau-de-vie), prune, dark chocolate, blood orange, rose petal, mango, and heather honey attest to the complexity, depth, and charm of the aromatic profile. Upon aeration, notes of red fruit (raspberry, strawberry), candied ginger, and ripe mango make a striking and remarkable appearance.

    Palate : Broad and substantial. Initially, beeswax, varnish, and precious wood (sandalwood) deeply permeate the taste buds. Then, evoking carrot cake, gingerbread, and the previously detected raspberries, it gradually reveals flavors of marshmallow and violet candy with captivating indulgence and realism.

    Overall : Long and silky. Delicate in texture, it is initially refreshed by various herbal infusions (gentian, linden) and citrus zest. Evolving toward more fermentation-driven notes—where each grain plays its part—it evokes a morning bowl of cereal. On the retro-nasal finish, shards of chocolate, grated ginger, and rock candy linger on the palate.
