    BOURBON : Willett Bourbon 6 Year Old 2020 is a straight bourbon from Kentucky in the United States.

    PROFILE : This bourbon reveals a vivid and smooth profile, featuring cereal, cocoa, vanilla, spicy and fruity notes. Made from a mash bill of 72% corn, 13% rye and 15% barley, this cask strength bottling was matured on the 7th floor of warehouse E.

    Color : vieil or soutenu.

    Nose : At once lively and smooth. Initially characterized by scents of corn, cocoa powder, Bourbon vanilla, and cinnamon, the aromatic profile gradually reveals notes of dried fruits (apricot, hazelnut) and citrus (orange, lemon)—notes that are both delicate and profound. Over time, pine resin and licorice root introduce a pleasant balsamic freshness.

    Palate : Refined and nuanced. Powdery (cocoa), gently spicy (grated ginger), and citrusy by turns, the flavor profile is a model of balance. As it gains suppleness, it takes on honeyed (lavender), stewed-fruit, jammy (marmalade), and praline qualities. At the very end of the palate, a multitude of peach varieties (white, vineyard, apricot-like) and nectarines take center stage.

    Overall : Delicate and smooth. While long retaining the memory of this fruity, indulgent character, it ultimately returns to cereal-driven territory, where corn plays a leading role. On the retro-nasal finish, captivating scents and flavors of cardamom, coconut milk, and exotic fruits (pineapple, banana) open up new olfactory and gustatory horizons.
