SUWAIZUMI Yakami

Name is about a princess in the founding myths of Japan, this highly original pink sake gets its color from anthocyanins from an ancient purple rice variety Asamurasaki (morning purple), of which only 2% is incorporated alongside local Tama Sakae rice polished to 55%. Fermentation is carried out with Suwa Dandelion in-house yeast. Balanced by the acidity from the white koji, the natural sweetness of the rice makes this mellow, lightly alcoholic sake an ideal aperitif served at room temperature, or to finish a meal.
