This exceptional peated malt from the “Queen of the Hebrides” is a perfect example. Finished in a Pedro Ximénez cask, this single malt opens on a dense, brooding nose: dark hedgerow fruits, sticky raisins, and golden syrup, deepened by a savory edge of cooked meat. The palate unfolds in layers: first syrupy sweetness, then a wave of ashy coal embers. Roasted nutmeg adds warmth, while fleeting herbal notes provide a flicker of freshness before fading. The finish is long and smouldering, with treacle, tobacco leaf, and glowing embers lingering gently. This whisky is part of the Odyssey range, an annual collection of 20 carefully selected casks, re-racked for a second maturation of at least three years. Each bottle explores the possibilities of controlled aging, charting a unique journey through the influence of the wood.
