MARS 3 ans 2014 Komagatake FIRST FILL BOURBON

Nose : refined, distinguished. With incredible freshness and youthful maturity, the initial nose is herbaceous (hay, straw), peaty and ashy, fruity (candied lemon) and spicy (star anise). Allowed to breathe, the peat becomes more powerful and then medicinal, whilst malted barley rises to the surface of the glass. This is closely followed by new fruits (William pear, Golden Delicious). Gradually, its spicy character becomes more intense (ginger, clove, nutmeg)._x000D_ _x000D_ _x000D_ _x000D_

Palate : energetic, slender. Full of conviction and elegantly peaty, the attack wastes no time beating a path between the notes of nettle, bramble and thistle found along its path. And so, with a couple of scratches, the mid-palate arrives in a sunny pasture planted with a huge number of fruit trees, including apple trees, cherry trees, peach trees and pear trees. Floral and springtime flavours spread their fragrances across the edge of the palate.

Overall : long, balanced. Acacia honey and apple jelly give a quilted softness to a finish that becomes increasingly spicy and rooty (ginger, pepper, gentian). A more diaphanous peat brings a light acridity to the very end of the palate. The retro-nasal olfaction wavers between white fruit, toffee, malted barley, cucumber and courgette flower. With lots of tone, the empty glass insists on the fine acridity of the peat.
