We use thyme harvested in the Alpilles, macerated for an extended period, and then distilled to extract its aromatic freshness, resinous notes, and herbaceous depth. A dry liqueur, lightly sweetened, our farigoule is an expression of Provençal tradition.
It can be enjoyed neat, on the rocks, or with a splash of dry tonic.
Nose : Thyme, garrigue honey. An immediate aromatic intensity typical of the sunny, limestone terroir of the Alpilles.
Palate : Full-bodied, warm, and generously herbaceous. Thyme expresses its aromatic power mingled with notes of savory. A measured sweetness adds roundness without masking the vegetal tension.
Overall : Long, resinous and dry. An impression of sun-warmed garrigue mixed with a slight herbaceous bitterness.
