This Kilchoman 100% Islay is the result of a particularly experimental approach, playing with cuts and the different stages of distillation. In the first distillation run, a distillate made from unpeated barley malt was collected. In the second run, this distillate was then redistilled with foreshots and feints from previous distillations, made from peated barley malt. With finesse, it highlights the altruistic character of a discreet peat except for on the mid-palate, where it takes on more oily and earthy dimensions.

Nose : Refined, deep. On the first nose, notes of dried grass (cut hay, lucerne) quickly make way for strong spices (black pepper, clove) and candied citrus fruit (lemon). Allowed to breathe, Kilchoman’s naturally iodine and mineral nature takes centre stage (seaweed, chalk).

Appearance : Or pâle.

Palate : Clean, precise. The radiant attack is at once peaty, vanilla, herbal and salty. With impressive charm, the particularly deep and smooth mid-palate develops more oily and chocolatey registers.

Overall : Long, well-balanced. White flowers (jasmine, lily of the valley) and green tea flavours initially bring a very pleasant sensation of freshness to the flavour palette. In the after-taste, grains of malted barley, almond milk and a delicate liquorice softly envelop the taste buds.
