The legendary Jack Daniel’s is actually a Tennessee whiskey not a bourbon (Kentucky): after distillation, the whiskey is filtered through three metres of maple wood charcoal before being poured into barrels. This process known as the Lincoln County Process is what makes this popular whiskey so smooth.
Nose : sweet and seductive, almost tactile. Floral (lily) and initially narnished, it takes on a register dominated by banana.
Palate : mellow with a slight bitterness (radish with salted butter) and very young woody aspect (fresh pine), it develops thick, pastry notes of buttered croissants and tropical fruits (banana, pineapple).
Overall : as soft and gentle as a breeze, it prolongs its sensual feel with a hint of tannic sourness (tea, fresh grape skin).
