    Izumibashi Tonbo Green is a junmai sake made by combining several varieties of rice, including Yamada Nishiki, Omachi and Rakufumai, all grown by the Izumibashi brewery. The maturation period is one year, in stainless steel tanks at a temperature of around 5° C. The presence of a green dragonfly on the label illustrates the brewery's commitment to the preservation of nature, through the limited use of pesticides in their rice cultivation. Izumibashi stands out as one of the few sake breweries to grow its own rice (47 hectares by 2023) and to attach great importance to its environment. The taste of Izumibashi Tonbo Green is balanced between sweetness, umami and acidity, with a subtle finish. It is perfect throughout a meal and can be enjoyed at 15°C or slightly reheated (to 40°C). It goes well with well-seasoned, cooked dishes such as tomato-based dishes and meats like duck confit, cassoulet or even mussels marinière. Once opened, this sake can be stored at room temperature, away from light, and will easily keep for a month, or even longer if kept refrigerated.
