This new release from the distillery is structured on the backbone of American Oak (ex Bourbon casks) that have been matured for over 5 years. The single malt from these casks are then matured for a further few years in select French Oak (ex wine casks). While this expressions shares a familiar vein from the much loved Pinot Noir Cask finish, the extended maturation time in aged French Oak adds additional complexity and flavour.
Nose : The nose is immediately drawn to a summer salad with nuances of oranges and berries before retreating with honeyed hints and white spice.
Palate : The palate manifests a rich berry body - courtesy of the French Oak wine casks, encouraging a gentle layer of candied oranges and cherries. Raisin notes lead to stewed sultanas and clove whisper. Ginger and cinnamon spice cameo with cereal hints.
Overall : The wild berry flavours play harmoniously, dancing gracefully with notes of currant and cloves, before closing with sophisticated restraint to an elegant adieu.
