CHRISTIAN DROUIN La Blanche Bio

From the Domaine's orchards located at Hiautre, in Gonneville sur Honfleur, La Blanche Bio was produced from more than 20 historical varieties of cider apples. This high-stem orchard, managed in Organic Agriculture since 2013, is a classic example of an orchard where cows and apple trees cohabit. Collected on the ground over a period of more than two months, the washed, sorted, and grated apples were pressed in a moderate way in order to extract no more than 650 liters of juice per ton of apple. The apple must was then fermented for a period of 4 months before being distilled twice in an iron still. Placed in stainless steel tanks at the exit of the still, the brandy was gradually reduced to reach its equilibrium degree.
