AUSTRALIA 17 ans 2007 Elixir Distillers

This molasses rum begins with a fermentation using a special yeast combination, followed by a two-step distillation: first in a column still, then the heart transferred to a pot still. Aged 10 years in American oak in Australia, it then matured for 7 additional years in refill bourbon barrels in the UK. This small batch of 2 casks was bottled in 2025. The rum opens with banana and distinctive diesel notes, along with raisins and currants. The palate is dense and oily, with boozy sultanas, overripe baked bananas, condensed milk, dried mango, and dried mint. The finish dries on the tongue with mint, tarragon, and sunbaked tropical fruit.
