Vermeil is an organic rum, produced from pure sugar cane juice and organic molasses from Central America. The distillate is then aged for 3 years in oak barrels that have contained bourbon, followed by 3 months of finishing in Maury barrels from the Clos des Vins d'Amour in the Roussillon. The ageing in bourbon brings a touch of vanilla and a smoky woodiness, while the finishing in Maury softens and gives a lot of gourmandise.
