Junmai Daiginjo with the 40% most polished rice, Yamada-Nishiki rice, grown in the region. The sweetness and umami taste spread elegantly through the mouth. The yeast used is No. 9 and the sake brewing process is traditional (Kimoto). The fresh taste and pure umami of the sake are in excellent balance with the unique flavour of the sake brewing process. Best served warm. Serving temperature: Between 10 and 55°C.

Color : or vif.

Nose : fine, unctuous. Very delicate, the aromatic palette is initially mentholated and aniseed. This is followed by lemony, floral fragrances (lily of the valley). Increasingly lactic (rice pudding) and juicy (white grape), it continues with scents of zucchini blossom and fresh walnut.

Palate : Round and tasty. Fruity (golden apple, pear), the palette is also mentholated, praline-flavored and tenderly spicy (candied ginger). Verdant (grass, cut hay), it poetically recreates the bucolic landscape of a rice paddy.

Overall : long, full-bodied. Inviting us to bite into a bunch of perfectly ripened white grapes, the tasting becomes ever fresher. Suddenly, an uninterrupted stream of rice grains spreads around the palate. Overflowing with naturalness, the retro olfaction is dominated by rice pilaf flavors.
