A marc brandy, made from Corvina grapes, after they have been dried on straw mats and used to produce Italy’s well-known Amarone della Valpolicella; the marc is then distilled by Master Distiller Gianni Capovilla in his famous water-bath stills just outside the town of Bassano. Grappa di Amarone is an elegant eau-de-vie, characterised by notes of figs, raisins, incense, white flowers, kirsch and pepper.
All bottles of Capovilla spirits are laced, waxed and finally stamped by hand, reflecting the care that is taken at every stage of production. The handwritten label records the type of fruit, the year of harvest and the number of each bottle. A genuine work of art.

- Appearance : Colourless.
- Nose : Concentrated, elegant. Essence of fig mingles with grape stalks. Scents of white flowers and incense. The secondary nose gives preference to fresh fruit (pomelo, watermelon). A pleasant note of rancio recalls cherries in brandy, becoming kirsch-like.
- Palate : Balanced, firm. The palate is dominated by a delicious sweetness with hints of spice (white pepper, cinnamon, nutmeg) and notes of chocolate and black truffle.
- Overall : A long parade of bright mauve flowers (lilac, violets, lavender). Crushed apricot stones emerge, with extremely concentrated sugars. Notes of lime and angelica bring freshness.

A veritable engineer of nature, he has, since 1976, been dedicated to finding new ways to purify his eaux de vie and preserve the essence of its fruit and pomace, filing numerous patents related to distillation, conservation and reduction before bottling.
